Goat cheese, tomato, and sweet onion omelette

Introduction

Ingredients

    1 oz. goat cheese
    1 plum tomato, chopped
    1/2 cup chopped sweet onion (like vidalia or walla walla)
    3 eggs, scrambled

Directions

Saute onions and tomatoes in pan with a little cooking spray until onions are translucent. Pour eggs into pan. When eggs start to set, add goat cheese. When eggs are firm and cheese starts to melt, serve.
