1/2 c chopped onion
1 green pepper chopped
1 c chopped carrot
2 Tbsp olive oil
1 1/2 Tbsp all purpose flour
1 1/2 tsp curry powder
4 c chicken broth
1/2 apple grated
1/4 c brown rice
4 oz boneless skinless chicken breast
pinch, salt, pepper, dried thyme
Add chicken broth, mix, and bring to a boil.
Simmer for 30 minutes.
Add apple, rice, chicken, salt, pepper, and thyme. Simmer another 15-20 minutes or until the rice is done.
