Slow-Cooked Country Green Beans

Introduction

While cooking time may seem extremely long, the cold-fashioned way ws to serve the beans with the "pot liquor" and cornbread to sop it up. While cooking time may seem extremely long, the cold-fashioned way ws to serve the beans with the "pot liquor" and cornbread to sop it up.
Number of Servings: 4

Ingredients

    1 1/2 pounds green beans, trimmed and halved
    1 cup chopped yellow onions
    1 ham hock (optional - not included in calc's)
    4-6 small new potatoes ( halved if too big)
    1 Tablespoon vegetable oil
    3/4 teaspoon salt
    1/4 teaspoon freshly ground black pepper
    1/4 teaspoon cayenne pepper
    1 Tablespoon minced garlic

Directions

Heat oil and ina medium, heavy saucepan.
Add the onion and saute under tender - 3 minutes
Season with pepper and Cayenne. NO SALT YET
Add the beans, garlic and ham hock, if using.
Add enough water to almost completely cover the beans.
Bring to a boil, reduce heat and simmer for 2 hours.
Approximately 1 hour into the cooking process add the potatoes and check for saltiness. Add salt at this time to taste.

Serves 4 as main meal with cornbread, or 8 as a dish dish
