Foil Wrapped Chicken

Introduction

This is yummy as heck foli wrapped chicken like you might see at a Chinese restaurant! Great flavors make it very satisfying. This is yummy as heck foli wrapped chicken like you might see at a Chinese restaurant! Great flavors make it very satisfying.
Number of Servings: 4

Ingredients

    8 chicken thighs, bone, skin and excess fat removed
    2 Tablespoons Soy Sauce
    1 Tablespoon Dark Brown Sugar, packed
    1" section of ginger root, peeled and julienned
    One large scallion, julienned
    8 Pieces of aluminum foil

Directions

Cut chicken thighs into bite sized pieces.
Mix soy sauce, brown sugar and ginger for marinade.
Toss chicken into marinade and chill for at least 60 minutes, up to overnight.
Spoon chicken mixture onto foil, and top with a small amount of scallion.
Fold foil into packets, sealing edges well and ensuring air is squeezed out.
Bake in a dish or baking sheet with edges (packets may leak) for 45 minutes.
Be careful when opening - packets will be hot.

Serving size is two packets as an entree.
