Weight Watchers Chicken & Mushrooms in Parmesan Cream

Introduction

I got this from a Weight Watchers cookbook but had to make some changes! I got this from a Weight Watchers cookbook but had to make some changes!
Number of Servings: 3

Ingredients

    1/2 pound of thin chicken tenderloins
    2 Tbsp. all-purpose flour
    1 tsp. I can't believe it's not Butter
    1 tsp. olive oil
    1/4 cup evaporated milk, nonfat
    1 cup sliced mushrooms
    2 tbsp. half and half
    3 tsp. reduced fat parmesan cheese
    1 tbsp. fresh or dried parsley
    Dash pepper

Directions

1. Lightly coat chicken with flour
2. Using a nonstick skillet, combine butter and olive oil until butter is melted; add chicken and cook over medium heat until lightly browned.
3. Transfer chicken to a plate and set aside.
4. In same skillet, saute mushrooms over high heat until tender and crisp.
5. Stir in milk and half and half. Reduce heat to medium and cook, stirring frequently, until mixture is heated, 1-2 minutes.
6. Stir in remaining ingredients and cook until cheese is melted. Return chicken to skillet until heated through, 1-2 minutes.
7. Serve over brown rice or mashed potatoes.
