Ingredients
1 4LB ROAST PORK SPOON ROAST
½ CUP FLOUR
1 10-OZ CAN ROTEL ORIGINAL DICED TOMATOES & GREEN CHLLIES
1 10-OZ CAN ROTEL MILDER DICED TOMATOES & GREEN CHILLIES
4 4-OZ CANS DICED GREEN CHILLIES
1 EXTRA LARGE WHITE ONION, DICED SMALL’
1 JALAPENO CHILLI, MINCED
6 TO 8 LARGE GARLIC CLOVES, MINCED
1 TSP CUMIN
1 HEAPING TSP MEXICAN SEASONING
Directions
Remove roast from wrapping and roll in flour coating heavily. Place in crock pot and sprinkle any unused flour over the top. Mix all remaining ingredients in a bowl and mix well and pour over roast.
Cook in crock pot on high for 6 to 8 hours or for 12 hours on low.
When done, break roast with tongs and serve rolled in tortillas.
(Recipe for jalapeno can be increased for added heat)
