Low sugar Rhubarb Pineapple jam

Ingredients

5 Cups Rhubarb diced
2.5 Cups Granulated Sugar
2 Cups (1 Can) Crushed Pineapple
1 or 2 pkg strawberry sugar free jello gelatine
Directions
You will need 6 to 8 1/2 pint jelly jars.
In a Large cooking pot mix rhubarb, sugar and pineapple. Cook on Medium heat setting for about 20 min or until mixture is soft and rhubarb is cooked through. Stir often. Place jelly jars in a hot water bath on the stove. Remove from the water and fill each jar leaving headspace at the top. Place lid on and screw cap on. Jars will ping when they seal.
