Glazed Roasted Pineapple

Introduction

OMG this is so yummy! My local market had some whole pineapples on sale and I decided to give this recipe from Taste of Home, Healthy Cooking, AUG/SEPT 2008 issue a try. So glad I did! OMG this is so yummy! My local market had some whole pineapples on sale and I decided to give this recipe from Taste of Home, Healthy Cooking, AUG/SEPT 2008 issue a try. So glad I did!

Ingredients

    1 fresh pineapple
    2 Tbsp. melted butter
    1/4 cup packed brown sugar
    2 Tbps. Honey
    1/2 Tsp. Pumpkin Pie Spice or Ground Cinnamon
    splash of Rum or 1/4 tsp. rum extract
    3/4 cup raspberry sorbet

    Diabetic Exchange: 1 starch, 1 fruit, 1 fat

Directions

1. Peel pineapple; cut into six wedges. Cut wedges lengthwise to remove the core; cut each widthwise into four pieces. Pour butter into a 2 quart baking dish; top with pineapple. Combine the brown sugar, honey, pie spice and rum: spoon over pineapple.
2. Bake, uncovered, at 400 degrees for 35-40 minutes or until golden brown. Spoon cooking juices over the top. Serve warm with sorbet.

Serving: 4 pineapple pieces with 2 tablespoons sorbet.
