Spicy Chicken Fingers with Honey Mustard

Ingredients

1 whole chicken breast
1/2 c. whole wheat flour
1/2 c. bread crumbs (plain)
1/2 c. milk
3 tsp. Red or cayenne pepper
salt
pepper
olive oil
dijon mustard
whipped honey
Directions
You'll need two small mixing bowls: one for milk, and the other for the flour, bread crumbs, salt, and red and pepper. Cut up chicken into chunks or strips, and place in the milk bowl.
Heat a large pan or skillet with olive oil on medium heat.
Transfer the chicken to the flour bowl. Coat well with the flour mixture by pressing the chicken into it. Add chicken to hot pan carefully.
Allow to cook for 3-5 minutes on each side, depending on the thickness of the chicken strips and how crispy you like it (I cook them long so they're really crispy!). Remove from pan and drain onto paper towels.
For the honey mustard, mix about 2 tbsp. dijon mustard and 2 tsp. whipped honey, or adjust to your preference. Dip chicken fingers in the honey mustard for a little cool down from the spice!
Makes 2 servings.
