2 c. Whole Wheat Spaghetti, cooked
4 Tbsp. White Onion, chopped
1 Tbsp. Extra Virgin Olive Oil
1 Roma Tomato, diced (remove guts)
1 Tbsp. Cilantro, chopped
1 clove Garlic, chopped
3 oz. Smoked Salmon, shredded
2 Tbsp. Parmesan Cheese, shredded
In a skillet, sautÃ© the onions with olive oil until almost soft. Add the tomato and cilantro; cook for another minute. Then add the garlic and salmon; cook an additional minute to warm the salmon and meld the flavors. Serve over the spaghetti with a little parmesan cheese sprinkled on top.
Also, good over fresh spinach leaves instead of pasta. This will help cut calories!
