Granny's Chicken N Rice

Introduction

I like simple foods and this fits the bill. It's light and has lots of flavor. I like simple foods and this fits the bill. It's light and has lots of flavor.

Ingredients

    Ingredients:
    2 chicken tenders
    1/4 cup bell pepper, chopped
    1/4 cup celery, chopped
    1 cup broccoli,chopped
    3 medium mushroom, sliced
    1 cup long grain rice, cooked
    1 Tbs Olive oil
    1/4 cup low sodium chicken broth
    Tony Chachere's salt free seasoning, to taste

Directions

Season chicken with Tony's and brown in olive oil. Remove from pan and add small amount of broth and stir. Add broccoli, celery, peppers and mushrooms. Saute for a minute or two, adding another small amount of broth just to wet vegetables. Add rice, balance of broth and mix well. Return chicken to pan and cover and simmer for approx 6 or 7 minutes till chicken is firm to the touch. This serves two. You can add other vegetables and increase the broth, or other ingredients as you choose. It is easy and quick.
