Introduction

I was looking for a recipe for alfredo sauce that didn't require heavy cream so i could cut a few calories and still eat what i like. well, my kids and i tried this and it was very good. we also tried it with romano cheese instead of Parmesan, wow. not bad for low fat!! Ingredients

    1 tbsp. blue bonnet homestyle vegetable oil spread( you can substitute butter, margerine whatever brand just watch the fat)
    1/4 c. flour
    1 tsp. salt
    1 1/2 c. grated Parmesan cheese (try to stick with the fresh stuff you have to grate yourself, it melts better)
    3 c. 1% milk
    1/2 tsp. pepper
    1 box cooked pasta(fettuccine, rotini, shells, your choice)

Directions

melt margarine in a saucepan over medium heat. add flour; cook stirring for about one minute. start adding the milk, pour in a small amount to cover the bottom of the pan and whisk until the flour and margarine is mixed in, continue to add the milk small amounts at a time. bring to a boil, whisking; reduce heat and simmer, stirring occasionally for 5 minutes. stir in Parmesan pour over pasta.
makes 8 3/4 cup servings if using rotini pasta.
