The Tuna Casserole of Awesome

Number of Servings: 8

Ingredients

    1 can of tuna
    2 cups of whole wheat pasta
    0.5 cup green peppers
    0.5 cup mushrooms
    0.5 cup onion
    1 can of low-fat cream of mushroom soup
    0.75 cup of skim milk
    2 tbsp of low-fat cream cheese
    2 tbsp margarine
    1 cup shredded reduced fat cheddar cheese
    0.5 cup corn flakes cereal
    Spices (recommended: garlic salt, Greek seasoning, black pepper, seasoning salt)

Directions

Chop veggies and cook pasta as per box instructions until desired softness. Sautee onions with butter over medium-low heat, slowly adding mushrooms and peppers. When veggies reach desired softness, slowly blend in soup, milk, cream cheese and spices. After creamy, add tuna, pasta (and some of the cheddar cheese if desired.)

Spray or lightly grease casserole dish (both 9x12 and 9x9 dishes work, depending on the thickness desired. I stick with the larger one to make 8 servings.) Spoon mixture into dish and even out. Sprinkle top with the rest of the cheddar, followed by the corn flakes.

Bake at 350 degrees for 15 to 20 minutes.
