Pizza Beans (South Beach Diet- all phases)

Number of Servings: 13

Ingredients

    (1) lb Lima Beans
    (1) large onion, chopped
    (3) cloves garlic, chopped
    (3/4) cup olive oil
    (4) ripe tomatoes, peeled and chopped
    (3) medium carrots, sliced
    (1) cup celery, diced
    Parlsey, chopped (to taste)
    Salt & Pepper (to taste)

Directions

(1) Soak the beans overnight in water.
(2) Boil them until soft (slightly undercooked is best) and strain them well.
(3) Peel and chop tomatoes.
(4) Add olive oil, onions, garlic, carrots, celery, parsley, salt and pepper.
(5) Spread beans in large, glass baking dish.
(6) cover beans with vegetable mixture.
(7) Bake for about 40 minutes at 350 degrees until beans are hot and bubbly.
