Ingredients

    1.5 cups fresh or frozen corn (from 2 ears)
    1 cup shelled edamame, prepared
    .25 cup chopped red onion
    1 tbsp chopped fresh cilantro
    .5 tbsp olive oil
    1 tsp grated ginger root
    2 tbsp lemon juice

Directions

Mix all ingredients together. Best made ahead so flavors can meld together.
