2 cups whole wheat flour 1/2 cup sugar 1 tsp. baking soda 1 tsp. cinnamon 1 tsp. nutmeg 1/2 tsp. salt 2 eggs, beaten 2 T. oil 1 cup buttermilk 1/2 cup strawberr jam or jam of choice
In a mixing bowl, stir together flour, sugar, baking soda, cinnamon, nutmeg and salt; make a well in the center. Whisk together eggs, oil, buttermilk and jam. Pour all at once into the well. Stir just until dry ingredients are moistened. Do not overmix. Place in greased muffin tins. Bake at 375 for 20 minutes or until done. Yield: 15 muffins.
