Luau Kabobs

Introduction

Great summertime meal with rice or couscous and a small salad!! Great summertime meal with rice or couscous and a small salad!!
Number of Servings: 8

Ingredients

    2 lb boneless country style pork ribs cut into 1 1/2" cubes
    6 T terryaki sauce (low sodium if you have it)
    1 T olive oil
    1 clove garlic minced (more if you like)
    1 T ground ginger
    1 fresh pineapple cut into bite sized cubes
    1 large red bell pepper cut into pieces
    1 large green bell pepper cut into pieces
    1 medium onion cut into pieces
    1 large zucchini sliced into 1/2" slices

Directions

Combine teriyaki sauce, olive oil, garlic and ginger. Add pork cubes and marinate no less than 2 hrs.

Soak skewers in cold water while you cut up the pineapple and all veggies.
Drain pork discarding marinade.
Load your kabobs and grill over medium heat 20-25 min until done.
