Low-Fat Banana Bread

Introduction

I've been tweaking this recipe for a while, and it's pretty good, although I'm still trying to reduce the calories a little. We also cut the slices pretty thick around here, so you can do better if you cut into 12 instead of 10. Number of Servings: 10

Ingredients

    1/2 cup sugar
    1/2 cup Splenda
    1/4 cup light butter, melted
    Approx. 3 medium bananas, mashed
    1/4 cup skim milk
    1/4 cup low-fat sour cream
    1/4 cup egg substitute
    1 cup flour
    1 cup whole wheat flour
    1 tsp. baking soda
    1/2 tsp. salt
    Cooking spray for baking pan

Directions

1. Combine sugar, Splenda and butter until well-blended.
2. Add banana, milk, sour cream and egg substitute and beat well.
3. Combine flour, whole wheat flour, baking soda and salt and stir well.
4. Add dry ingredients to creamed mixture and beat until blended.
5. Coat bread/loaf pan with cooking spray and then pour batter in.
6. Cook at 350 for approximately 55 minutes. It's better to cook it towards the bottom of the oven because the top can burn while the inside is still mushy.
