Crispy Chicken Breast

Ingredients

    4 3 oz chicken breast fillets
    1 egg, beaten
    1 1/2 cups crushed corn flakes
    Salt and pepper

Directions

Dip chicken breast in the beaten egg mixture, then in the crushed corn flakes. Melt Smart balance in a pan, then cook chicken over medium heat for about 2 minutes on each side until lightly browned. Place on cookie sheet and transfer to preheated 350 degree oven for 10 - 15 minutes until golden brown and chicken is done.
