IntroductionSomething different for breakfast. Something different for breakfast.
1 Red Potato (about 150 grams)
1 small onion
2 toes of garlic
1 lg. egg
1/4 cup egg beaters cheese & chive
1 TB Grated Parmesan Cheese
Diced the onion and garlic while potato is in microwave and set aside.
Wash and cut ip a few spinach leaves and set aside.
Heat 1 TB. Olive oli in fry pan on medium heat. Take potato out of microwave and transfer to fry pan. Brown lightly. When browned to your satisfaction, add the veggies and continue to stir until onions are soft and spinach is wilted.
Scramble the egg and egg beaters together with about 1 TB. parmesan cheese and pour over potato spinace mixture. Stir as needed until cooked through.
Makes 1 large serving or 2 average servings.
