Mexi-chix Salad

Introduction

Delicious alternative to tortillas. Put some in a pita for my son-he loved it!!! Very versatile meal that can be switched up to accomadate caloric count & carb count by eliminating rice or switching to stuffed pitas, delicious!! Ps, I also considered making them into lettuce wraps with romaine, which i probably will try next!! Delicious alternative to tortillas. Put some in a pita for my son-he loved it!!! Ingredients

    16 oz Boneless Skinless Chicken Breast
    1 jar salsa
    8 oz pck shredded cheddar
    1 cup brown rice
    1 tbls chili powder
    1 tbls garlic powder
    4 cups lettuce
    1 tbls olive oil

Directions

Brown chicken breasts in oil. Prepare brown rice while chicken is browning. Add 2 or 3 tbls of water and cover chicken with lid and simmer for 20 min or so. Should be tender. Remove chicken from pan and let cool some. Cut chicken into small pieces and return to pan. Brown chicken a little more and add salsa and spices. Arrange rice, chicken, cheese & lettuce in bowl and mix. Add hot sauce or onions to your liking. Serves 4 to 5.
