Salmon Salad

Introduction

Salmon salad which can be eaten over lettuce or as a sandwich/wrap/pita. Salmon salad which can be eaten over lettuce or as a sandwich/wrap/pita.
Number of Servings: 5

Ingredients

    Salmon - 6oz, cooked
    1/3 Cup light sour cream
    1/3 cup light mayo
    Juice from 1/2 lemon
    2 Tbsp chopped dill
    1/4 cup chopped celery
    1/4 cup chopped onion
    1/2 cup chopped apple (sweet)
    salt/pepper to taste

Directions

cook, cool and flake salmon filet.

In a separate dish mix all other incredients. Fold salmon into wet mixture.

** Some like to add capers to this recipe.

  • I made this and had it with a mixed spinach/lettuce mix. It was very good. I really like the addition of apples to this mix. Gives it a nice, crunchy texture. I also added the capers to as per the suggestion. - 11/12/08
