Roasted Tomato Basil Soup

Introduction

Roasted Soup Roasted Soup
Number of Servings: 2

Ingredients

    1 White Onion, diced
    2 Large Garlic Cloves, finely minced
    1 TBSP Olive Oil
    1 Bay Leaf
    Pinch of Thyme
    1/2 TBSP Sugar
    Pinch of Salt
    Pinch of Pepper (freshly ground)
    2 Cups Canned Tomatoes, diced or whole plum
    Chopped Fresh Basil Leaves

Directions

In a heavy-bottomed pan, combine the onion, minced garlic, sugar, salt, and pepper. Cook for 15 minutes over medium heat until soft and sweet, stirring occasionally. Next add the tomatoes and chopped basil leaves. (If you want, puree the ingredients to make them smooth.) Bake in a 450 degree oven for 30 minutes. Stir in any black parts that accumulate. Makes 2 8 ounce servings.
