Sweet and Sour Pork Stir-Fry

    12 oz. boneless pork loin, trimmed of all visible fat 1 can (8 oz.) pineapple chunks in juice 2 Tbsp. Worcestershire sauce 1 Tbsp. cornstarch 1/2 tsp. salt to taste 1/4 tsp. freshly ground black pepper to taste 1 Tbsp. canola or peanut oil, divided 2 cups fresh or frozen broccoli florets 1 medium carrot, thinly sliced 1 medium onion, cut vertically into 1/2-inch slices 8 ears canned baby corn 1 garlic clove, chopped 1 tsp. minced fresh ginger

Directions

1. Freeze pork until firm, about 20 minutes. Cut pork into 1/4-inch by 2- or 3-inch strips. Set aside.

2. Drain juice from pineapple into a small bowl, reserving pineapple. Add Worcestershire sauce and cornstarch to juice. Season with salt and pepper, if desired. Set aside.

3. In wok, heat 2 teaspoons oil over high heat. Add pork and stir-fry until white. Add broccoli, carrot, onion, corn, and reserved pineapple. Stir-fry until broccoli and carrots are brightly colored, about 2 minutes. Transfer to plate. Set aside.

4. Add remaining 1 teaspoon oil to wok. Add garlic and ginger. Stir-fry until fragrant, about 10 seconds, taking care not to burn them. Stir pineapple juice mixture. Add to wok with meat mixture. Stir-fry until liquid has thickened and meat is cooked through, 2 to 3 minutes. Serve immediately.

    This is one of my favs, I use a bag of stir fry veggies to make it quicker, also I use a lot more garlic (good for the heart!) and extra ginger (BTW, fresh makes a big diff. in taste). I use an entire can of baby corns too (look in the asian section of store to find them). Always a fav. @ my home! - 3/27/08

    It is much better when you sub. low sodium soy sauce or tamari for the worchestershire. Also more garlic and I used a bunch of green onions for more flavor. - 8/25/08

    Finally made it!! Everyone liked it but said the same thing,,(it's missing something) kind of bland. I think more garlic & green onions next time,,,& wished I would've paid attention to the sodium..WOW!! Will tweak that next time too,,,but Very good!! - 8/26/08

    Nice recipe. I modified and made it with boneless/skinless Chicken Thighs. It was just as tasty. I agree with some of the other comments, it did need extra Garlic but, of course, that's all up to personal tastes. Sure enjoyed this good-tasting recipe. Thanks! - 2/23/09

    Made it last night and really liked it. Very easy to make and all ingredients that I have on hand. After reading the comments, I think I will cut out the Worchestershire next time, and up the pineapple juice. Only problem was that I didn't immediately put away the extra portions, and we overate! - 2/22/08

    I drop the salt there is no reason for it. Worchestershire sauce is high in salt. It a good meal but I do add extra broccoli - 1/15/08

    I followed other reviewers' advice and used low-sodium soy sauce, and more ginger and garlic and added a red bell pepper. I used leftover pork tenderloin, which I put in at the end just to reheat. It had beautiful color and was super delicious! My kids loved it, too! - 1/23/10

    as a single person, i cut this recipe in half. it was very good. added sodium free soy sauce, green peppers and regular corn instead of baby ears since i didn't have any. it was well worth the effort and fit in nicely with my weight watchers points. i served it over whole grain brown rice. - 6/3/09

    Delicious recipe! Didn't have the baby corn so I substituted green peppers & didn't have fresh ginger so I used dried. Definitely will try again with fresh ginger instead! The fresh vegetables definitely made it great! - 3/3/09

    I will try this recipe and will naturally omit the salt and add a little vinegar. The pineapple juice s/b enough sweetness. Love my vegies so will add more. Looking forward to trying this in the near future. - 2/21/09

    This sounds really delicious and healthy!
    I'll have to leave out the Worsteshire Sauce, because it is a migraine trigger for me (as is soy sauce).
    I'll substitute a few teaspoons of sesame oil, and the oriental flavor will still be there.

    Under #4 it says 4 servings. to decide how big a serving is divide the entire recipe by 4. It that's too big, take less. Very good, but i too, omitted most of the salt. - 4/17/08

    4 serving, stated at the end, like any recipe. just divide it into four equal serv, like any other. too much sodium, for me, too many ingredients. I could do the same with 2 bags froz. stirfry vegs and rest of their recipe ingredients, except worcestershire and salt. - 2/21/08

  • I made this with leftover cooked pork loin and frozen stir fry veggies. I had to use olive oil instead of canola oil and garlic powder instead of fresh garlic. Otherwise I followed the recipe, and it did turn out a little bland, but adding lite soy sauce to it made it wonderful. - 1/21/10

    I just used the Sparkpeople recipe calculator and came up with a different sodium calculation. Without the baby corn (which I coudn't find in the list) it calculated to 451.6 mg of sodium. The other calculations were slightly off too, but not as significant. But this recipe sounds good I'll try it! - 2/22/09

    I will make this but omit a lot of the salt, the sodium is way to high, kind of surprised since the recipe came from the American Institute for Cancer Research., and yes, where are the serving sizes. I guess I could put the info into the recipe calculator, since I am omitted the salt. - 2/21/08
