Turkey Stuffed Bell Peppers

Ingredients

4 medium bell peppers
1 lg. onion, chopped
1 tsp. olive oil
1 1/4 lbs. ground turkey breast
2 tsp. ground cumin
1 tsp. italian seasoning
1 garlic clove, minced
1/2 tsp. salt
1/2 tsp pepper
4 oz. shredded cheddar cheese
2 med. tomatoes, finely chopped
1 1/2 c. whole wheat Panko breadcrumbs
1/4 tsp. paprika
Directions
Cut peppers in half lengthwise and discard seeds. In a large kettle, cook pepers in noiling water for 3-5 minutes. Drain and rinse in cold water; set aside.
In a large skillet, saute onion in oil until tender. Add turkey, cumin, italian seasoning, garlic, salt and pepper; cook and stir over medium heat unitl meat is no longer pink.
Transfer to a large bowl; stir in the cheese, tomatoes and bread crumbs. Spoon into pepper halves. Place in a 15x10x1 inch baking pan coated with non stick spray. Sprinkle with paprika.
Bake, uncovered, at 325 for 20-25minutes or until heated through and peppers are tender.
