Introduction

I found this recipe in a magazine from a reader who said she makes a batch on Sunday and then puts them in the fridge (after cooling). She then microwaves one for a quick healthy bkfst in the a.m.! Number of Servings: 12

Ingredients

    5 eggs
    2 diced tomatoes
    1/2 onion diced
    1/2 c cheese shredded (feta suggested, i used low fat cheddar for this recipe though)
    4 slices cooked and chopped turkey bacon

Directions

Make 12 portions (I eat two for bkfst, but nutritional info is based on the fact that it fills 12 muffin cups in a muffin pan.)

Combine all ingredients and pour into muffin cups that have been sprayed with non-stick cooking spray. Bake at 375 until golden brown (about 11 min.) Allow to cool, then store in refridge until ready to eat. (Microwave single servings.)


Note: This recipe would be good with addition of any veggies that you like, mushrooms, green onions, chives, whatever. :)
