Cheesy veggie corn chowder

Introduction

This is one of my favorite soups. I love it. Now I add different (and more) veggies than the way my mother made it.I use whatever veggies I have on hand and sound good. Now I add different (and more) veggies than the way my mother made it.I use whatever veggies I have on hand and sound good. This is what I used most recently.
Number of Servings: 10

Ingredients

    3 C potatoes, chopped
    1 C carrots, sliced
    2 stalks celery, sliced
    1/2 large onion, chopped
    2 leeks
    2 zucchini
    1 can cream-style corn
    3 C water
    1/2 tsp salt

    1/4 C whole wheat pastry flour
    1/4 cup butter
    2 C milk (I use 1%)
    10 oz shredded sharp cheddar cheese

Directions

In a large pot, cook all veggies in 3 C salted water until tender.

Cheesy sauce: whisk butter and flour over medium heat until it forms a paste. Continue whisking while you add the milk. Stir until it starts to thicken. Melt in the shredded cheese.

Add the cheesy sauce to veggies and heat to desired temperature, but don't boil.

Makes about 10 servings. (about 1.5 Cups)
