2 Firm medium size tomatoes, chopped
2 cucumber, diced
1/5 medium size Onion
4 sprigs of Parsley for garnish, chopped
2- 3 sprigs of Mint
1/2 cup of lemon juice
4 tbsp Extra Virgin Olive Oil
2 large whole or white wheat Pita bread
Salt to taste
2) break the bread into bite size.
3) mix the vegetables
4) add the lemon juice and the olive oil.
5) add the bite size baked pita bread
6) salt to taste
This is a a healthy fresh salad, with a crunch. Great with BBQ
