Chicken Nuggets



Introduction

These golden nuggets of goodness are great-tasting, and actually not bad for you! These golden nuggets of goodness are great-tasting, and actually not bad for you!

Ingredients

    -1 Chicken breast, boneless, skinless, defrosted
    -1/2 cup Plain bread crumbs
    -3 tsp Paprika
    -1/2 tsp Sea Salt
    -1/4 cup Egg Beaters Original

Directions

Mix bread crumbs, paprika, and sea salt in a medium bowl, and set aside.

In a large saucepan, heat about 1 cup of vegetable oil on medium.

Cut chicken into bite-size pieces, close to 1-inch cubes.

Rinse, and dry.

Put the chicken into a medium sized bowl and pour the Egg Beaters over them. Stir so the chicken is completely coated in Egg Beaters.

Using a toothpick, transfer each piece of chicken into the bread crumb mix.

Shake the bowl with chicken and bread crumbs, coating the chicken completely.

Transfer the breded chicken pieces into the oil once it is hot, and let them fry for about 45 seconds.

Using a strainer-spoon thingy, lift the fried chicken pieces out of the oil and onto a plate. Be sure to let as much oil drip off as possible.

Let cool for about 1 minute. Serve warm, or refrigerate and reheat later!


Makes 4 servings of about 6 pieces.

  • It is disturbing to me how many people made this recipe thinking it was 120 cals per serving, when the nutrition calculation did not include either the oil or the egg beaters (but especially the oil). - 3/1/11

    This is perfect for taking care of that fried chicken need. The Sea Salt is an absolute must, it really made it good. I used cut up chicken tenders. These cook up nice and crisp and quick. Great for a lunch. I'm considering making a large batch for two lunches in a row. - 1/15/09
