2 skinless, boneless chicken breasts 4 cups cooked whole wheat rotini 4 medium carrots (sliced) 2 cups frozen broccoli 1/3 cup soya sauce 1/4 cup olive oil 1/4 cup vinegar
Bake chicken breasts in 350F oven until no longer pink, cut into one inch cubes. While chicken is baking prepare pasta according to directions. In a frying pan, sautee carrots and broccoli (I use cooking spray to lightly grease pan). When a fork can pierce the carrots slices, remove from heat. Combine above ingredients in large bowl. Mix together last three ingredients and pour over mixture (mix well). This dish can be eaten warm but I prefer to chill it for at least an hour.
