Apple Oatmeal Muffins




Number of Servings: 1

Ingredients

    1 1/2 cups all-purpose flour
    1 1/2 cups instant oats
    1/2 tsp cinnamon
    1 tsp baking powder
    3/4 tsp baking soda
    pinch of salt
    1 cup applesauce
    2/3 cup skim milk
    1/4 cup sugar
    2 tbsp oil
    1 egg
    1 cup finely chopped apple

Directions


Mix dry ingredients, add remaining. Batter should be lumpy. Fill greased (I use cooking spray) muffins cup 2/3 full with batter. Bake at 400F for 20 minutes or until golden brown.

  • I'm sorry but these were pretty dreadful. Practically zero flavor. The only thing that remotely saved them was the golden raisins I added. Could use far more cinnamon, some nutmeg, just to start. Will not be making these again. - 9/19/10

  • turned out dry and lacking sweetness. I used splenda instead of sugar so that may be the reason. But I did add some honey to batter also. - 9/16/10

  • I made thees today; they were simple and are very good; just the right amount of sweetness for us! The only ingredient I changed was the oatmeal...I used regular instead of instant since that's what I have in the house. They don't even really need anything else on them like butter, either. - 3/13/10

  • Delicious! I am a big fan of moist, chewy apple muffins, and these were both! I ended up accidentally using olive oil (yikes) but a few extra tsp of vanilla masked the strong flavor of it. Also, I added 1/4 cup sugar. The applesauce I used was chunky and homemade so I didn't add the apples. - 1/4/10

  • These muffins feel super healthy. I did not have any applesauce in the house. So instead I used low fat sour cream. I also shredded the apple with a grater instead of chopping it. I added raisins and pecans too! Great recipe. - 10/7/09

  • I made this with half spenda and half sugar, I didn't have any apples so I used frozen berries. They were a little dry but they were still really good(maybe more applesauce?). We froze the extras and they are an awesome energizing snack for my little sister's 4 hour gymnastics practice! - 7/23/09

    I don't think that the nutritional info is accurate. What is the real nutritional info per muffin? The ingredient details only list apples in the calculation. - 4/20/08

  • These were delicious even though I would have preferred thrm to be a little sweeter. I might add in a mix of sugar and Splenda to add more sweetness next time. They were yummy though, even so. - 3/18/08
