Tomato, Spinach, and Feta Frittata

Introduction

Number of Servings: 4

Ingredients

    7 large eggs or eggbeater equivalent amount
    .5 cup water
    1 cup cooked brown rice
    4oz Fat free feta cheese
    .5 cup salsa
    3 plum tomatoes
    1 package of frozen spinach
    .5 cup Fat free cheddar if you wish
    2 tbsp chopped fresh cilantro if you wish
    .5 tsp dried oregano, crushed

Directions

Beat eggs and water
Mix in everything but the tomatoes
Pour into sprayed glass baking dish or oven safe skillet
Slice tomatoes and arrange on top
Bake at 400 degrees for 30 minutes or until knife inserted comes out clean
