Salsa rice and beans

Ingredients

1 can Great Northern beans - rinsed and drained
1 jar salsa (about 14 oz) - I prefer a chunky hot salsa
2 cups instant brown rice
1 tbsp crushed red pepper
1 tbsp chili powder
Directions
Make the brown rice according to package instructions. Mix with the salsa, beans, and the spices (can use spices of your choice - ground cumin works really well too). Enjoy.
Makes 4 servings.
You can also make single-serve versions (microwave 1/2 cup of the instant brown rice according to package instructions, add a few tablespoons of salsa, 1/4 can of beans, and the spices). I often make a serving in the morning to bring into work for lunch. It takes under 5 minutes and reheats well.
