Egg Fried Rice

Introduction

A very simple and quick dish. High in calories, so good for an entire lunch. Or, eat half. Feel free to adjust to your own taste. A very simple and quick dish. High in calories, so good for an entire lunch. Or, eat half. Feel free to adjust to your own taste.
Number of Servings: 1

Ingredients

    I cup cooked rice
    2 beaten eggs
    1/2 cup peas
    1/4 chopped onion
    1 tbsp canola or vegetable oil
    dash of salt

Directions

If using frozen peas, cook them now. Heat oil in a skillet or wok over medium heat. Decrease heat, and add egg. Immediately add rice before egg sets. Once egg is barely cooked, add vegetables. Cook until onions are translucent. Season and serve.
