Crockpot Chicken Ratatouille

Introduction

Ingredients

    2 skinless chicken breasts- 1 inch pieces
    3 med. yellow sqaush- sliced
    3 med. zucchini- sliced
    2 fresh tomatoes- diced
    26 oz jar marinera
    1 sm. red onion- thinly sliced
    1 bell pepper- chopped
    italian seasoning
    salt
    pepper

Directions

Makes 8 1 cup servings
Cut your vegetables and chicken. Put all ingredients in the crock pot. Cook for 6-8 hours on low. Serve with polenta.

  • My husband is not a major force in the kitchen and he made this recipe for us. It's cheap, it's easy, and it's absolutely DELICIOUS! Serve over brown rice. We're thinking of adding green chile next time for a little spice, but it's great as it is, too. - 10/2/08
