Ingredients

    0.5 cups Better 'n Egg substitute
    30 spinach leaves
    1/4 cup reduced fat mozzarella
    2 slices Pepperidge Light Style 7 grain bread
    20 grams sliced cucumber
    1 roma/plum tomato

Directions

Preheat a large pan on high and spray pan with non-fat cooking spray. Turn heat down to about medium heat. Add egg substitute and top with spinach. Once eggs start to set, top with cheese. Cover with pan until melted. When the cheese is melted, fold the omelett over onto itself and serve on bread with sliced tomatoes and cucumbers on the side. A meal in under 10 minutes!
