This is a delicious fat free, low sugar and vegan chocolate banana muffin. Put jam on top and it tastes delicious. It tastes like a cupcake but is healthy like a muffin. Number of Servings: 8

Ingredients

    1/4 tsp salt
    1/4 cup applesauce
    3-4 ripe bananas
    1/4 tsp baking soda
    1/4 cup cocoa
    1/4 cup sugar
    1/8 cup maple syrup
    1 cup whole wheat flour
    1 cup plain or vanilla soymilk
    1/3 cup plain or vanilla soy yogurt

Directions

Preheat oven to 350 degrees. Oil muffin pan.

In one bowl put the whole wheat flour, baking soda, salt, vanilla, sugar and cocoa. Mix together.

In another bowl mash the bananas, add the soy yogurt (vanilla or plain works best), maple syrup, applesauce and soy milk. Mix together.

Add the wet to the dry.

Put the mix into the oven until it is just about full. Put in oven and cook for about 25 minutes.
