HC (Healthy Choice) spinach stuffed peppers

Introduction

This would be good with a grilled meat and another small side. Sometimes I make macaroni and cheese.
(You can use any color peppers you like, even one of each)

Number of Servings: 6

Ingredients

    bell peppers
    water
    spinach
    tomatoes
    onion
    bread crumbs
    garlic powder
    salt and pepper
    mozzarella cheese

Directions

Cut peppers in half lenghwise. Remove seeds. In 6-quart pot, bring water to boil over high heat. Add peppers. Cook for 4-5 min. or until tender. Rinse w/ cold water and drain. Arrange peppers cut side up in casserole dish.
Preheat oven to 350.
Prepare spinach as directed on package. Drain, pressing to remove excess moisture. In small mixing bowl, combine spinach and remaining ingredients, except cheese. Spoon mixture evenly into peppers. Sprinkle cheese evenly over peppers. Bake for 25-30 min.
