Chicken and Veggie Soup

Number of Servings: 8

Ingredients

    2 boneless skinless chicken breasts, cut into bite sized pieces.
    4 potatoes pealed and cut into bite size peices
    .5cup frozen peas
    .5cup frozen green beans
    2c fresh asparagus, cut into bites sized pieces
    1 small onion chopped
    1 celery stalk chopped
    .5c fresh parsley chopped
    .5 lemon (for juice)
    4c stock

Directions

cook veggies, and parsley until tender in a dry pan. Add stock and bring to a boil, then add potatoes, boil for about 5 min. Then add chicken. Cook until potatoes are tender and chicken is cooked. Add lemon juice for flavor, salt and pepper to taste. Enjoy.
