Introduction

My husband loves this colorful and flavorful combination, especially the slight heat from the crushed red pepper flakes. I entered the # of servings as 3, because we love huge heaping bowls of this, but it can easily enough serve 5 or 6 with smaller portions. Number of Servings: 3

Ingredients

    1 small yellow summer squash
    1 small zucchini squash
    1 medium Vidalia or other sweet onion
    1 red bell pepper
    2 TBSP Canola Oil
    1/4 tsp crushed red pepper flakes
    Salt and pepper

Directions

1) Chop the vegetables into small pieces, roughly 1/2 inches each. Try to make them uniform, so they cook evenly.

2) While preparing the vegetables, heat oil in a saute pan over high heat. Add crushed red pepper flakes.

3) When oil is hot, add the onions and cook a minute or so. Add the red peppers and cook another minute or two. Add the yellow and green squashes and stir; add salt and pepper to taste. Continue to saute, stirring occasionally, until the veggies are cooked through and start to lightly carmelize.
