Ahi Tuna Potato Salad

Introduction

Spanish influenced Potato Salad - A Great way to use up leftover Grilled Tuna and New Spring Potatoes for tomorrows lunch! Or a something cool for a hot summer dinner! Spanish influenced Potato Salad - A Great way to use up leftover Grilled Tuna and New Spring Potatoes for tomorrows lunch! Or a something cool for a hot summer dinner!

Ingredients

    3 oz Grilled Ahi Tuna*
    1-2 leftover Spring New potatoes**
    2 Tbs Sweet Red Onion Diced
    1/2 cup Diced Red Pepper diced
    4 Green Olives chopped
    1 tsp Olive oil
    2 tsp Newmans Lighten Up Sundried Tomato Dressing - or any good light Italian dressing
    Cracked Black Pepper
    salt if needed

Directions

Makes one Lunch or Dinner serving.

* Grilled Ahi Tuna (Recipe)
** Spring Potatoes With Garlic Scapes(Recipe) or you can use any red or yukon gold boiled potatoes

Chop up Potatoes and Tuna into small bite sized pieces and place in a small mixing bowl. Add all other chopped ingrediants. Drizzle over olive oil and Dressing add fresh black pepper. Toss until well coated then, Refrigerate till lunch. (At least 2-4 hours or overnight)

Pack up to carry in for lunch. You can eat salad as is or serve on a bed of Greens of your choice with fresh summer tomatoes as garnish.
