Studies show that different colored fruits and vegetables contain different nutrients. With this power packed delicious salad you can make getting healthy as simple as admiring a rainbow.

Ingredients

    half cup of : watermelon, cantaloupe, peeled cucumber, yellow bell pepper, dried cherries, dried blueberries, and walnuts. Add the juice from half a lime, and a tbsp of fresh ground ginger (or 1 tsp dry powdered kind)

Directions

This is a no cook rainbow of flavors. The lime and ginger bring out the freshness of the fruits and add a little zip.

Dice all the ingredients and add together in large bowl. Mix in the ginger, and spritz with lime juice.

Serve over your favorite meat, on a bed of lettuce, alongside some cottage cheese, with healthy chips, or its great on its own.
