Dijon Chicken Salad

Introduction

Add whatever spices you like. Add whatever spices you like.
Number of Servings: 3

Ingredients

    Cooked Chicken Breast, 9 ounces
    Lite Mayonnaise, 3 tbsp
    Grey Poupon Dijon Mustard, 2 tsp
    Country Dijon Mustard, 2 tsp
    1 Cucumber, peeled, seeded and minced
    1 Granny Smith Apple, peeled and minced
    1 Onions, raw, minced
    Garlic Powder
    Onion Powder
    Salt
    Pepper
    Cumin

Directions

Dice cooked chicken breast (or use pre-cooked)
Mince onion
Seed and mince cucumber
Peel and chop apple
Mix in mayo, mustard and spices.

Chill.

I made a Chicken Salad melt and served it on ciabatta . One side had sliced tomato and the other sun dried tomato. Seems like you are eating a lot but with all the cucumber, onion and apple it is a great way to get some veggies and fruit to your daily diet.
