Garlic Pepper Potatoes

Introduction

Quick and easy side dish that is high in fiber. Quick and easy side dish that is high in fiber.
Number of Servings: 4

Ingredients

    4 cups yellow or white potatoes (skins on) diced into 3/4 inch cubes
    1 tbsp garlic minced
    .5 tsp salt
    1 tbsp olive oil
    .25 tsp pepper

Directions

Combine all ingredients in a microvave safe dish, stirring well. Cover and microwave on high 8-10 minutes or until tender. Stir gently before serving.

Makes 4 servings of approx 3/4 cup or 6 1/2 cup servings (nutrition calculated for 4).
