Vegan Cheese Sauce Mix

Ingredients

    Dry mix:
    3 cups raw cashews
    1 cup nutritional yeast, fortified
    3 tbsp seasoning salt
    3 tbsp garlic POWDER
    3 tbsp onion POWDER
    1 tbsp smoked sweet paprika
    1 tbsp toasted sesame seeds
    .5 cup arrowroot flour (may replace with cornstarch)

    Wet ingredients:
    3 tbsp prepared mustard
    6 cups water

    *note in place of garlic and onion powder use fresh, sauteed in a tiny bit of oil before adding mix with water.

Directions

Its ideal to use a good food processor but in a pinch very small batches of about .5 cup can be done in a blender. Use a very DRY processor.

1. In food processor, grind raw cashews to fine consistency careful to not over grind into butter.

2. Blend in remaining dry ingredients.

3. Store in tightly sealed container in fridge for up to six weeks.

To prepare four servings:

1. In small saucepan over medium high heat, mix heaping half cup of dry mix with 1 cup water. Continously whisk until sauce starts to boil.

2. Remove from heat. Whisk in tsp of prepared mustard. Adjust seasonings to taste.

3. Serve over noodles, or rice and veggies, or stirred into your favourite salsa.
