Crabby Egg Sandwich

Introduction

My husband enjoys a fast food breakfast sandwich but the calories and fat are so high that they are off our list. He asked if I could come up with a satisfying substitute and this one hit the mark! Ingredients

    Two slices thin-sliced wheat bread
    1 tsp honey mustard
    1 tsp pesto sauce
    1 slice sweet onion
    1 slice sweet red pepper (1/8" by 3")
    2 slices large portabella mushroom (1/4" by 6")
    1 slice avocado
    1 serving scrambled egg whites
    sliced imitation crab chunks (30 g)
    1 small slice swiss cheese (10 g)


Directions

Makes 1 breakfast sandwich

Saute in non-stick pan onion, pepper, mushroom and crab slices. While the mixture is heating, spread pesto sauce on one slice of wheat bread and honey mustard on the other side. Place the avocado on the pesto covered bread and the swiss cheese on the mustard covered bread. Pile the sauted mixture on top of the cheese. Scramble the egg whites in the heated pan. When done, place the eggs on the avocado. Close the sandwich and place in a sandwich grill for 1 minute or put the sandwich in the skillet and grill both sides using a spatula to press the sandwich together until bread is crisped. Cut in half and serve.
