Easy Crepes

Introduction

These taste great with yogurt & fruit or use them for the crepes in your favorite recipe. These crepes can be made up in advance and frozen for up to 1 month. These taste great with yogurt & fruit or use them for the crepes in your favorite recipe. These crepes can be made up in advance and frozen for up to 1 month.
Number of Servings: 8

Ingredients

    1/2 tsp nutmeg
    1 cup fat free milk
    1/2 cup egg beaters
    1 tsp splenda

    1/2 cup whole wheat pastry flour

Directions

1. In a bowl whisk nutmeg, milk, egg substitute, & splenda until well mxed then add flour & whisk until smooth. Let batter stand for 10-15 minutes. This is a good time to prepare any filling or topping you'd like to eat with the crepes

2. Heat an 8 inch skillet on medium heat.

3. Coat the skillet with nonstick spray in between each crepe. Pour 1/4 cup of batter into pan once its hot and swish the pan around so you coat the bottom of the pan evenly with batter. Cook 1-2 minutes & flip cooking another 15-20 seconds & remove. Repeat this step until all batter is used.
