Hamburger Assistant

Introduction

Number of Servings: 4

Ingredients

    3 cloves garlic
    2 medium carrots
    3/4 cup celery
    1 cup diced onion
    cooking spray
    1 pound 93% lean ground beef
    2 t. dried thyme
    3/4 t. salt
    1/4 t. ground pepper
    2 c. water
    1 14-ounce can beef broth
    2 cups of whole wheat pasts (rotini works best)
    2 T. Worcestershire sauce
    1/4 c. flour
    1/2 c. fat free sour cream
    1/2 c. finely chopped green onion for garnish

Directions

Finely chop the garlic, carrots, celery and onion. Spray your pan with cooking spray, add veggies and place the lid on top. Sweat the vegetables over medium heat until onions are translucent. Add beef, thyme, salt and pepper, breaking up the beef as it cooks and there is no more pink. Stir in the water, Worcestershire sauce, pasta and 1 1/2 cups of the broth, then bring to a boil. Cover, turn down to medium and cook until pasta is tender, 8 to 10 minutes, or according to package instructions. While that is cooking, whisk the remainder of broth with flour, making sure there are no lumps. Wondra flour is fantastic for this. When the pasta is done, add the slurry and stir over heat until the broth is thick. Add sour cream and fold in. Garnish with the finely chopped green onion and serve.
