Bean and Chile Quesadillas

Ingredients

1/4 cup vegetarian canned refried beans
2 tbps canned, diced, mild green chiles
2 tortillas (wheat, flour or corn)
1/4 cup grated cheese
1 tbps finely chopped cilantro (optional)
salsa to taste
Directions
1. Spread half the beans and chiles on half of each tortilla. Sprinkle cheese and cilantro onto the filling.
2. Warm a dry skillet on medium heat. Heat each tortilla in the skillet. When the tortilla becomes pliable, fold the plain half of the tortilla over the filling and cook each side for about 2 minutes (until cheese melts).
3. Serve with prepared salsa.
