Moo Shu Shrimp

Ingredients

    2 small Low Carb Tortillas
    4 oz raw shrimp
    2 oz egg beaters
    Salt and pepper
    ginger
    1 small clove garlic, minced
    1/4-1/2 cup sliced mushrooms
    1-1/2 C shredded cole slaw mix
    1 scallion halved lengthwise and cut
    1 T hoisin sauce

Directions

Stir fry mushrooms and cole slaw mix, adding spices. Just before done, add the egg and cook. Remove from pan.
Stir fry shrimp til just done. Remove from pan. Add back the vegetables, add shrimp and half of the hoisin sauce.
Meanwhile, heat tortillas.
Drizzle the remaining hoisin sauce on the tortilla, spoon the shrimp/vegetable mixture onto the tortilla, top with scallions, roll up and eat.
